Passito rosso is a wine made from grapes that have been dried to concentrate their juice and later fermented: Corvina, Rondinella, Molinara and Rossara. The result is similar to that of the ice wine process, but suitable for warmer climates. Passito rosso is typically sweet and regarded as a good companion to chocolate desserts.
